Here’s a peak at our perfect summer’s day.

Yeah that’s my teenage daughter and her friend. They are studying for A/S levels. Looks hard doesn’t it? I think that pile of stuff under her chair is books. Can’t be sure though.
E likes playing in the paddling pool. It’s a big one and takes a while to fill up. She gets impatient. I spend a lot of time shouting, “put that hose back in the pool!”
That’s my OH hard at work. He can’t sit still. He loves his garden. I love cooking the things he grows in his vegetable patch. A match made in lettuce? Hmm, not sure. He wishes I’d help more with the weeding. Problem is…my perfect day involves this:
That’s a sun lounger, a good book, my iPhone, a large glass of diet coke with ice, a bowl of organic veggie chips and a selection of low fat dips. Even better when enjoyed in complete peace.
And that after all that hard work, a little bit of this:
Banana Coconut Ice Cream Pie
This was the perfect summer choice for this week’s Tuesdays with Dorie. Thanks to Spike Bakes (head on over there for the recipe) we got to make an ice cream pie with store bought chocolate ice cream! I used Haagen Daaz Belgian Chocolate and it was a strong enough flavour to handle the addition of two bananas and rum. The crust was a mixture of coconut, butter and biscuit (I used a butter cookie) and was suitably crunchy. I did not put an extra layer of bananas between the biscuit base and the ice cream as personally that felt like too much to me. I decorated the top with slices of banana and piped whip cream.

I forgot what I do on the perfect summer day. We had 4 inches of snow yesterday! But I’m sure this yummy pie will be a part of our summer. It was delish!

I do all your favorite summertime things but in the fall, winter, and spring months. Summers are WAY too hot here in steamy Florida to do much more than sip lemonade and fan oneself under a shade tree or, better yet, hang out in an air conditioned house. BTW love your idea for ice cream pie.
