Coconut Tea Cake
I missed last weeks Tuesdays with Dorie because I was away. No where to be envious about I might add. On a residential with twenty-nine 9-11 year olds for five days. My daughter G’s (top left hand corner) school takes years 5 and 6 every Spring for some serious team building. Up every day for a 7.45am start and not finishing until lights out at 10pm. Exhausted doesn’t even begin to explain how I felt at the end of each day. How do teachers do it? An increased level of respect for them was one of the things I gained at the end of it all.
The “camp” provided plenty of outdoor activities like zip wire, abseiling, assault course, rock climbing, archery etc. Luckily I didn’t have to do any of it myself, just supervise. The kids were great and they made it all worthwhile. The weather, however, SUCKED! We had rain, sleet, snow, heavy winds and a very teeny weeny amount of sun. Oh well…it was good for pushing the stamina and also for getting to see my daughter in different circumstances then I normally would. I was very impressed that she managed to take part in all of the activities despite freezing conditions. She never moaned either, not once. That was perhaps the most amazing part!
Anyway I digress. The point is I couldn’t take part. However, we are allowed to do last week’s pick this week if we so wished. Which I did. It was chosen by Carmen at Carmen Cooks. So here it is…

I have to admit I have not had the pleasure of trying it yet. After Easter’s chocolate and cake extravaganza I have put this in the freezer (Dorie says it is possible to freeze this for up to 2 months) and I will be taking it with us to Scotland. We are off on Friday (spring break in England) so I won’t be posting anything new next week either. Let’s hope the holiday isn’t marred by a repeat of last week’s cold spell. Have a great time in Scotland. The cake looks delicious. If I freeze any type of sweet I have to write DO NOT EAT on it or it’s sure to disappear. Glad to hear you have no such problem at your house.

That looks way to good to have lying around the house- unless you have four skinny kids just waiting to dig in. Me- I could probably eat the whole thing in a couple of days. Not such a great idea, but I am impressed as always by its scrumptious factor.
